Do it!!!
I am building a engine for my roomates Mighty Max right now nothing to crazy just a 300-350hp set up,
it is a bolt in deal with TONS of room for any turbo you can hang on it.
The weak point is the transmissions, the stock truck transmissions will take right around 300hp the next step up is to run the 88-89 Starion transmission it will get you another 100 or so hp to work with before it breaks the input shaft.
And.....you don't use the 2.0l block you use the 2.4 TRUCK block, the 2.0 will not bolt up to the 2.4 truck transmissions, you could get a old 83-88 2.0l truck trans but it will let go before it gets out of the drive way.
OR... get a Chevy bell housing adapter plate from Buschur then you can run the 2.0. then the skys the limit when it comes power production.
and you can pick those little trucks up for $500-$700 all day long!!
Just stick to the 90-94's they are fuel injected and obd1 just one less thing to mess with when doing the fuel system
As for rear ends, many 92-96 Montero SR's came with clutch type LSD's and 4.88 gears and disk brakes!!
I have that same rear end in my little 4x4 red truck but with the factory air locker
plus ITS A TRUCK, no cop will even give a second look at it, and you can go to Home Depot and pick up some fence posts or rock or whatever, or take your slicks, tools and jack out to the track in one vehicle.
